Chocolate Muffins

These are Nigela Lawson's muffins. They are very easy to make and I usually make them with my daughter's help. Actually I just keep an eye on her so that she doesn't make a mess in the kitchen.

I really recommend this recipe for cook beginners. It is one of the easisest recipes, in addition muffins are really delicious.



Ingredients:
- 1 and 3/4 cup spelt flour (you can use even plain flour)
- 2 tsp baking powder
- 1/2 tsp baking soda
- 2 tbsp cocoa
- 1/2 cup unrefined sugar
- 1 cup milk
- 1/3 vegetable oil
- 1 egg
- 1 tsp vanilla extract
- 1/3 chocolate chips (or you can chop chocolate)

Line a muffin tin with liners. Preheat the oven to 400F/200C.

In a large bowl combine flour, baking powder, baking soda, cocoa, sugar. In another bowl mix together the oil, milk, egg, vanilla extract together.

Pour the liquids over the dry ingredients and mix together. Do not overmix!

Add chunks of chocolate or chocolate chips into the mixture and stir.

Spoon the mixture into the muffin tin.

Bake for 20 minutes.
