Strawberry Buttermilk Muffins

These cute little cakes are fluffy and light with sweet little bites of strawberry.


- 2 cups spelt flour
- 1 tbsp baking powder
- 1/2 cup unrefined sugar
- 1/2 tsp baking soda
- pinch of salt
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup buttermilk
- 4 tbsp oil
- 1cup fresh strawberries

Preheat the oven to 200C/400F. Grease 12 muffin tin or use muffin liners.

Dice strawberries into small pieces.

Mix flour, baking powder, sugar, baking soda and salt together.

Whisk eggs, vanilla extract, buttermilk, oil until combined and add to the dry ingredients, folding gently until just combined.

Spoon into the muffin liners. Bake for 12-15 minutes until golden brown.

This recipe will make around 12 muffins, regular sized.
