Chocolate pie with dried plums

Recourse: magazine Apetit 03/13. This cake originate from Italy and its original name is Torta Nera, it is very delicious. Don't be surprised that you won't see any sugar in the pastry ingredients, the pie is really yummy even without sugar in the pastry.





Ingredients:
 
For pastry:

- 300g spelt flour
- 150g butter
- 1 egg

For filling:

- 1 cup whipping cream
- 180g dark chocolate
- 40g butter
- 1-2tbsp brown sugar
- 3 egg yolks
- 100g pitted prunes


Process flour and butter in a food processor until fine crumbs form, then add an egg and 1/2 tablespoon water and process until just combined. Turn onto a floured work surface and knead lightly until dough is smooth.

Roll out the pastry and place it into the buttered pie tin. Prick the base with the fork and refrigerate for 30 minutes.
 
 

Preheat oven to 190C.

Put some weights on the base and bake for 20 minutes, then remove the weights and bake for another 10 minutes.
 
Meanwhile, combine cream, chocolate, butter and sugar in a heatproof bowl placed over a saucepan of simmering water, stirring occasionally until chocolate melts and mixture is smooth and glossy.
Let the mixture cool slightly and add yolks and mix it. Don't over-work as you will create air bubbles.
 
 
 
Reduce the oven to 150C. Scatter prunes over the tart base, then pour over chocolate mixture and bake until tart is just set 25-30minutes. Cool to room temperature, ten serve dusted with cocoa powder.
