Steak with Pepper Cream Sauce

This is my favourite meal. I ususally cook it on special occasions such as birthdays, when my husband does a good deal with a customer or when I pass tests at university.

So this time we have a birthday celebration so it was vital to cook something fancy.



In the Czech Republic we cook steak from sirloin or tenderloin. This time I've used tenderloin, it's the best part of the beef. It's so tender and delicious. Of course, the best way where to buy it is at your local butcher's. I don't recommend meat from the supermarkets, firstly I want to support local sellers, secondly the quality of the meat is worse and finally it is less ecological.

In the restaurants you get mostly the Sirloin steak which isn't bad at all, but you pay the same price as for the steak made from tenderloin which you cook at home. So it's the main reason why I cook steaks at home. In addition I've had bad experiences with steaks in the restaurants, I mean here in the Czech Republic.

Ingredients for 2portions:

- 600g/ 21oz the beef tenderloin, cut into 2 - 3pieces (1,5 inches thick)
- blend of black, white, red and green pepper - cracked
- salt
- olive oil

- 175ml/ 6fl oz heavy cream
- 1 tbsp butter
- 1 tbsp brandy (optional)
- 1 tbsp pickled green pepper or 1/2 tbsp rough grated green pepper

- 400g/ 14 oz potatoes
- 1 tbsp fresh rosemary
- 1 tbsp dried or fresh thyme
- salt
- olive oil

Season the steaks with salt and blend of pepper on both sides and press it into the steak. Sprinkle steaks with olive oil. Set aside but let the steakes out of the fridge, they should be at a room temperature for about 30 minutes before frying.



Preheat the oven to 200C/400F.

Peel the potatoes and cut them into eighths. Cover a baking sheet with parchment and spread potatoes over it and sprinkle thyme, rosemary and salt on potatoes. Bake until they are done, it's approximately 35 - 45minutes.


Heat the frying pan over high heat. Place the steaks in the frying pan and sear for 3 minutes, flip the steaks and cook for 3-4minutes. Remove the steaks from the pan and let rest about 5 minutes on a plate.
This time the potatoes are usually done, so I open the oven and put the plate with steaks on the rack in the oven.



Let the butter melt in the same frying pan you cooked steaks. Once melted, pour cream, add pepper, brandy. Cook until the sauce has desired consistency. It takes only few minutes.
