Potato and Broccoli Frittata

Inspiration from Smitten Kitchen.

- 8 small potatoes
- 1 small broccoli
- 1 small onion
- 8 eggs
- 3/4 cup parmesan cheese
- salt, pepper and oil

Cut the potatoes, bring water to boil and cook the slices of potatoes for 5-7 minutes. Then cut the broccoli and add to potatoes and cook for another 3-5 minutes. The potatoes should not be overcooked.

Prepare the frying pan, add oil and heat it. Slice the onion and place on the pan. Fry it for a while. Preheat the oven to 400F.

Drain the potatoes and broccoli and add to the onion and stir. Fry for a while. Take the larger bowl and mix the eggs with salt, pepper and a half of parmesan. Pour this mixture over the broccoli and potatoes and fry. When the bottom of Frittata is steady put it on the baking sheet with parchment paper, sprinkle with the other half of parmesan cheese and bake 10 minutes.
