Mince Pies

This recipe is from the recipe book Nigella Christmas.

The pastry:
- 4oz spelt flour
- 4oz all-purpose flour
- 4oz ghee or butter
- juice from one orange
- pinch of salt

For the filling:
- 3fl oz red wine
- 3oz brown sugar
- 11oz fresh cranberries
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground clove
- 3 1/2 oz raisins
- juice and zest from one tangerine
- 1/2 tsp vanilla extract
- 2 tbsp honey

Prepare the pastry in the food processor. Put the flours and ghee or butter, let it mix and then pour into the pastry orange juice. Let it mix until the pastry is perfectly combined. Let it cool in the fridge.

Put the red wine and the sugar in the saucepan and heat it until the sugar is melted.

Then add cranberries, cinnamon, ginger, clove, raisings, tangerine juice and zest. Stir and let cook it for 20 minutes.
After cooking, add vanilla extract and honey and stir. The filling should be thick.

Preheat the oven to 220C/425F.

Take out only a little pastry of the fridge. Roll it out and then cut the stars out of the pastry.
Take out the rest of pastry and cut it into pieces. Press every piece into the greased trays and top with the filling and a pastry star.

Bake about 10 - 15minutes.
