Peach Crumble Bars

- 3/4 cup brown sugar
- 1 tsp baking powder
- 2 cups wholemeal flour
- 1 cup buckwheat flour
- 3/4 cup unsalted butter
- 1 egg
- 1/4 tsp salt
- zest lemon

- juice of half a lemon
- 6 fresh peaches
- 1/3 cup brown sugar
- 4 tsp cornstarch

Preheat the oven to 190C/375F.

Stir together 1 cup sugar, baking powder, flour, salt and lemon zest. Use your fingers or a food processor to blend in the butter and egg. Dough will be crumbly.
Pat half of dough into the prepared greased pan.

In another bowl stir together peaches (cut them into small pieces), sugar, cornstarch, lemon juice.

Sprinkle the filling over the crust.

Crumble remaining dough over the layer.

Bake in preheated oven for 45-50 minutes until top is slightly brown.

Cool completely before cutting into squatters.
