Apricot Strudel with Cottage Cheese
Inspired from www.laskominyodmaryny.cz. This kind of strudel is from Austria and thanks to apricots is very tasty.
Ingredients:
For the pastry:
- 125g plain flour
- 125g wholemeal flour
- 1 egg
- about 100ml cold water
- pinch of salt
For the filling:
- 500g cottage cheese
- 2 eggs
- 600g apricots, sliced
- 100g unrefined sugar
- 1tbsp lemon juice
- 1tsp lemon zest
- 1 egg (for brushing the top)
All the pastry ingredients mix together until the dough is smooth and not sticky. Cover it with cling film and prepare the filling.
Mix the cottage cheese with eggs, sugar, lemon juice, lemon zest and stir apricots into the cottage cheese mixture.
Preheat the oven to 200C.
Divide the pastry into two pieces. Roll out every piece of pastry and cover with cottage cheese.
Then roll the pieces up. Beat the egg and brush the top of every strudel.
Bake for 40-50 minutes.
