Orange & Poppy Seed Cake
Recipe:
- juice from one orange
- 2 tablespoon orange zest
- 170g/6oz spelt flour
- 1,5 tsp baking powder
- 70g/3oz poppy seeds
- 150g/5oz softened butter
- 100g/3,5oz brown sugar
- 3 eggs
- 1 tablespoon almond pieces
Preheat the oven to 325F/170C.
Put orange zest, flour, baking powder, poppy sees, sugar into a mixing bowl.
Stir everything together and add softened butter, orange juice and yolks. Stir everything until it is perfectly combined.
Beat the whites and finally add them to the dough. Stir but only a little. Pour the dough into the tin which is greased or covered with parchment paper. Sprinkle the almond pieces over the top of the cake.
Bake about 50 minutes.
