Parmesan-Rosemary Crackers

Lovely combination of parmesan cheese and rosemary make these crackers very delicious.

- 1 cup spelt flour
- 1/4 tsp salt
- 50g grated Parmesan cheese
- 4 tbsp olive oil
- 4 tbsp milk
- freshly ground pepper
- sea salt for sprinkling the top
- 1 sprig rosemary, stem removed and leaves chopped

Heat the oven to 400F/200C.

Line a large baking sheet with parchment paper.

Put flour, salt, cheese, oil, milk, pepper into the larger bowl, mix all the ingredients together until just combined. The dough should not be sticky.

Form the dough into a ball, and roll it out onto a lightly floured cutting board until the dough is thin.

Then sprinkle with chopped rosemary and slightly press it into the dough. Cut the squares and then place them on the baking sheet. Sprinkle salt over the crackers.

Bake for about 10 minutes or until lightly browned. Cool on a rack.
