Almond Tart with Apricots


My daughter loves apricots, so every time when I cook, bake something with apricots I have to be very careful. Once the apricots are washed and cut they immediately disappeared:-) this time some of them had also vanished before finishing the cake.


For the crust pastry:
- 50g wholemeal flour
- 80g unrefined sugar
- 200g ground almonds (or you can use almond flour)
- 140g softened butter
- 2 eggs
- pinch of salt

For the filling:
 - 600g apricots (cut in half)
- 3 tbsp unrefined sugar
- ground cinnamon

Mix all the ingredients for the crust pastry in the large bowl with a wooden spoon.

Place parchment paper over the tart tin's base.

Preheat the oven to 180C.

Put the crust pastry into the tart tin and spread it evenly. Spread the apricots on the top of the crust pastry and sprinkle the tart with sugar and cinnamon.

Bake for 40 minutes.
