Strawberry jam

This strawberry jam is sweetened with Agave syrup instead of sugar. It is very delicious and healthier.


- 1,5kg strawberries
- 450g agave syrup
- 2tbsp lemon juice
- 4tsp agar agar dissolved in 100ml water

Cut the strawberries and place them into a large pot, add agave syrup, lemon juice and bring to boil. Then simmer about 30 minutes. Stir often and remove foam from the surface. It is good place a plate in a freezer and then place a teaspoon of the jam onto the cold plate. Then you can see if it is necessary to continue cooking the jam.

At the end of the cooking you add dissolved agar jelly and mix stir about 5 minutes. Transfer to hot sterile jars and seal. Process in a water bath or just refrigerate.
