Chocolate Banana Bread

- 3 ripe bananas
- 3,5oz melted butter
- 3,5oz brown sugar
- 1 large egg
- 1tsp vanilla extract
- 1tsp baking soda
- pinch of salt
- 1/2tsp ground cinnamon
- 1 cup spelt flour
- 1/2 Dutch cocoa powder
- 5oz bittersweet chocolate - grated

Heat the oven to 350°F. Butter a loaf pan.

Mash bananas in the bottom of a large bowl. Add melted butter, brown sugar, egg and vanilla and mix it all together. Place baking soda, salt, cinnamon, flour and cocoa powder and grated chocolate in the other bowl and then stir dry and wet ingredients with a spoon until is combined. If the cocoa is lumpy, you should sift it first)

Pour into the prepared pan a bake 55-65minutes. Wait until it is cooled and then you can serve.
