Chocolate Pie

Adapted from: Meg v kuchyni

For dough:
- 1 yolk
- 2oz brown sugar
- 9oz spelt flour
- a pinch of salt
- 31/2oz butter or Ghee
- 3tbs water

For caramel:
- 31/2oz brown sugar
- 31/2 fl oz heavy cream

For chocolate filling:
- 2eggs
-31/2 fl oz milk
-7 fl oz heavy cream
-7oz dark chocolate

Preheat the oven to 350F.
Mix all the dough ingredients together and then grease a baking tin or place parchment paper into it. Spread the dough over the baking tin and use a fork to make several little holes in the dough.
Then place some beans on the dough or different weight and bake it for 9 minutes. Then remove the beans and bake another 6 minutes.

Prepare the caramel. Add some sugar into the saucepan and heat. Once melted add hot cream and mix quickly. Pour the caramel over the baked pastry.

Heat the heavy cream for the chocolate filling. Add the chocolate and mix it well. In a small bowl mix the milk with the eggs. Finally, pour the milk mixture into the saucepan and mix it all until it is perfectly combined.

Bake for 30minutes.
