Sprouted Buckwheat Bars

- 2/3 cup sprouted buckwheat groats
- 1/3 cup almonds
- 1/3 walnuts
- 2 tablespoon flax seeds
- 2 tablespoon chia seeds
- 1/3 cup raisins
- 2/3 cup dried cranberries
- 1/3 dried dates
- 2 tablespoon freshly squeezed lemon juice
- 1/4 tsp cinnamon

- Mix the buckwheat and then put it into a bowl.
- Mix the almonds and the walnuts and add them to the buckwheat.
- Add flax seeds and chia seeds to buckwheat and grated nuts.
- Mix raisins, cranberries and dates with lemon juice and then this mixture add to other ingredients.
- Finally add the cinnamon and stir everything until it is perfectly combined.
- Press this mixture on the baking sheet ( and parchment paper) and let it cool.

How to sprout buckwheat? 

Pour some water into a bowl and add buckwheat groats to the water. Let them in the water about 15 minutes. Then sieve them and let it in the sieve and put a tea towel to cover them. Or you can let it sprouted in the bowl. It lasts 24 - 48 hours. It is good to splash it every now and then. The buckweat should be moist not wet.
