Potato Pancakes with Vegetable Mixture

I love potato pancakes. We tend to fry them usually in autumn and winter. We have rainy days currenty so I have decided to cook some delicious pancakes with vegetable mixture.





Recipe:

 Potato pancakes:
- 7 potatoes
- 2 tablespoon all-purpose flour
- 3/4 teaspoon salt
- 4 cloves of garlic
- 1 egg
- cumin, marjoram


Vegetable mixture:
- 1 eggplant/aubergine
- 1 zucchini/courgette
- 1 leek
- 3 cloves of garlic
- 1 tablespoon Balsamic vinegar
- salt, oil
- thyme, rosemary

Slice an eggplant and zucchini, sprinkle them with salt and let them sweat (I don't know how you call it, but here in the Czech republic we say that we let the zucchini and eggplant sweat, it means that after 20-30minutes vegetable starts loosing water).

Now we start preparing the pancakes.
Peel the potatoes and then grate them. Add four, salt, grated garlic, an egg and herbs to potatoes and stir it until it is completely combined. Set aside.


If the batter loses water, remove it regularly with a tablespoon.


Wipe slices of eggplant and zucchini with kitchen paper. Slice the leek and garlic and put everything into a bowl. Add thyme and rosemary and little oil and balsamic vinegar. Stir.


Put the mixture on the frying pan and fry it until it is done.



Meanwhile you start frying pancakes on another frying pan.

Once is fried, place a pancake on the plate. Add the vegetable mixture on the half of pancake and cover it with the other one.
