Blueberry Crumb Bars

Adapted from smitten kitchen.

These bars I tried last summer and immediately they became our favourite in our family. I baked them nearly once a week.
Now is the proper time to bake them again:-)



- 3/4 cup brown sugar
- 1 tsp baking powder
- 1,5 cup all-purpose flour
- 1,5 cup wholemeal flour
- 3/4 cup unsalted butter
- 1 egg
- 1/4 tsp salt
- zest lemon

- juice of half a lemon
- 4 cups fresh blueberries
- 1/3 cup brown sugar
- 4 tsp cornstarch

Preheat the oven to 190C/375F.

Stir together 1 cup sugar, baking powder, flour, salt and lemon zest. Use your fingers or a food processor to blend in the butter and egg. Dough will be crumbly.
Pat half of dough into the prepared greased pan.

In another bowl stir together blueberries, sugar, cornstarch, lemon juice.

Sprinkle the blueberry mix over the crust.

Crumble remaining dough over the berry layer.

Bake in preheated oven for 45-50 minutes until top is slightly brown.

Cool completely before cutting into squatters.
