Baked Rice Pudding with Stevia

Today it is the dessert made of rice, plumbs and sweetened with Stevia leaves.

If you are a fan of white sugar you will probably find that this pudding has an unusual flavour. Stevia simply does not taste like sugar, but if I can choose I go for untypical taste of Stevia in dessert.
There is lots of white refined sugar in our daily food more than you can imagine. For example in yoghurt, in bread, rolls, buns, toppings and lots of other food.

Living without sugar is not easy and in this recipe it is a good chance to replace sugar with Stevia.

In addition it is really tasty dessert.










Here is the recipe:

- 25 fl.oz milk
- 2 grams/ 4 teaspoon dried Stevia leaves
- 110 grams/4 ounces butter
- 200 grams/7 ounces brown, short-grain rice
- a pinch of salt
- 3 yolks and whites 
- fruit (apricots or plums are fine)

In a large saucepan pour the milk, add half of stevia leaves, half of butter, rice and salt.





Heat it until it boils. Cover with a pot and cook gently for about one hour or until rice soaks the milk up. Stir occasionally especially at the end of cooking, because rice tend to burn at the bottom.

Heat the oven to 325F/160C.

In a bowl stir together softened butter, yolks and the other half of stevia leaves. Add this yolk mixture into rice pudding and stir.



Beat the whites until they are stiff. And gently stir them with rice pudding. Pour the mixture into a greased baking tin, put fruit on the top and bake for about 20-30 minutes.
